This week, we would have organized an asparagus week in Mensa am Medizincampus. To ensure all of you have the chance of enjoying delicious seasonal vegetables, we are publishing two asparagus recipes this week. We start off with a tasty combination of green asparagus and strawberries. This is a great way to make a simple salad.
Ingredients (4 persons)
1,5 kg green asparagus
500 g strawberries
Salt (accordning to taste)
1 pinch of sugar
mixed pepper, ready ground or freshly ground from the mill
1-2 tablespoons raspberry vinegar or dark balsamic vinegar
1 tablespoon lemon juice
1 tablespoon of oil
Clean the asparagus, remove the bottom end and cut into pieces of about 2 to 3 cm. If the spears are thicker that 2 to 3 cm you should peel the lower third.
Fry the asparagus pieces in a little oil, season with a little salt and a pinch of sugar. Then deglaze with the lemon juice. Put everything aside and let it cool down.
Clean the strawberries, cut them in half lengthwise and marinade with sugar, pepper and vinegar according to taste.
Carefully mix the cooled asparagus with the strawberries.
