Vegan coconut rice pudding

  • 0,6 l soy milk
  • 1,8 l coconut milk, unsweetened
  • 400 g round grain rice (milk rice)
  • 2 pck. vanilla sugar or pulp from 1 vanilla bean stick
  • approx. 4 tablespoons sugar ( according to taste)
  • 1 pinch of salt

  • Mix and boil soy and coconut milk.
  • Add rice, vanilla sugar, sugar and salt.
  • Let the mix boil for about 3 minutes whilst stirring, then continue to simmer on a low heat for about 20 to 30 minutes until the rice is done.
  • Finally add sugar according to taste.
