Mensa at home: recipe for overnight oats "Carrot Cake Style"

Overnight Oats

Despite closed Mensas and Cafeterias, we do not want you to miss out on this delicious and healthy breakfast. That's why the next recipe from our Mensa series is "Carrot Cake Style" Overnight-Oats:

  • 7 tablespoons of oat flakes                           
  • 2 teaspoons of ground linseed           
  • 1 carrot, fresh                   
  • 1 date                                     
  • 0,2 l oat drink                             
  • 2 teaspoons of maple syrup           
  • 2 walnut kernels                     
  • Cinnamon
  • Nutmeg or mace (tip: mace, is finer and milder in taste and aroma)

  • Wash, peel and grate the carrot. Stone and chop the dates. Chop the walnut kernels into large pieces.
  • Put the oat flakes, linseed, grated carrot and date in a bowl and mix with the oat drink. Flavour with the spices according to taste.
  • Cover the bowl (preferably with a beeswax cloth, which is also environmentally friendly) and place in the refrigerator overnight.
  • The next morning, pour the maple syrup and chopped walnuts over it. If you like, you can add other toppings such as apple pieces.
