Mensa at home: recipe for mango-falafel balls with chive dip

Falafel is quite easy to make yourself. If you like it  fruity: some mango gives them a special touch. We suggest a fresh chives dip to go with it.

Falafel

  • 300 g dry chick peas  
  • 30 g parsley             
  • Juice from ¼ lemon
  • 12 g garlic                   
  • 12 g baking powder                  
  • 120 g mango (weight without stone)
  • Salt according to your taste
  • Dried chilies
  • Vegetable oil for deep-frying (e.g. rapeseed oil)

  • Soak the chickpeas in plenty of water overnight (about 16 hours). They must be covered with at least 10 cm of water.

  • Chop or cut chickpeas, parsley, mango and garlic very finely with a knife. Alternatively you can use a mixer if you have one.
  • Season the paste and mix with the baking powder.
  • Now form small balls weighing about 15g and then deep-fry them in oil (approx. 175°C). The balls should be floating completely covered with the oil. Let them drip off on some kitchen roll.

Chives dip

  • 18 g (1 small bunch) chives
  • 300 g soy yoghurt     
  • Juice from ½ Lemon
  • Salt, sugar, pepper according to taste

  • Mix the soy yoghurt with chopped chives and season to taste with lemon, sugar, salt and pepper.
