Mensa at home: recipe for chickpea fry-up with halloumi

The Mensas are closed and you have no idea what you could cook? We will publish recipes from our Mensa one at a time for recooking at home.

Unfortunately our Mensas and Cafeterias have to remain closed at the moment. To make sure that our guests still don't have to do without delicious food, we now want to share some of our recipes for cooking at home.
The first recipe on the list is:

Chickpea fry-up with Halloumi

Show details
  • 400g chick peas, canned
  • 200g yellow peppers
  • 4 cloves of garlic
  • 2 red onions
  • 500g cherry tomatoes
  • 300g Halloumi
  • Pomegranate vinegar (or other vinegar according to taste)
  • ground cilantro
  • Cumin
  • Curry Powder
  • Cinnamon
  • Sambal Oelek (or Chili)
  • Salt
  • Sugar
  • Water or vegetable broth
  • Corn starch

  • Wash the yellow peppers and cut them into large cubes.
  • Wash and cut the cherry tomatoes in half.
  • Peel the red onions and garlic and cut them into fine cubes.
  • Dice the halloumi.

  • Sweat the onions, garlic and spices on medium heat in a frying pan. Add the chickpeas and peppers. Then pour a little pomegranate vinegar over everything. Now fill it up with water or vegetable stock until everything is covered and let the mix simmer for about 10 minutes.
  • Add the Halloumi and cherry tomatoes and season everything with salt, sugar and more spices.
  • Finally, if necessary, add starch to the chickpea pan for the desired consistency.
